Dark Chocolate Truffles


Each year I also make homemade dark chocolate truffles for Valentine's Day. These are really simple to make and tend to prepare them in conjunction with the Oreo Truffles. This recipe doesn't make as many as the oreo truffle recipe but these are incredibly rich and I can only eat maybe one or two pieces a day, which is good for an indulgent snack. However, I would make these with plans to share and spread the love.






Dark Chocolate Truffles

Prep: ~30 min
Total: ~2 hours
Yields: ~25


Ingredients:

8 ounces 60% Bittersweet Chocolate Chips

1/2 cup Heavy Cream

1 teaspoon Pure Vanilla Extract

2 tablespoons Non-salted Butter

1 cup Cocoa Powder for dusting


Directions:

Heat the heavy cream in a small saucepan over medium-low heat until simmering.
 
Place chocolate and butter in a mixing bowl.

Remove the heavy cream from heat when simmering and pour over the chocolate mixture.

Let stand for 10 minutes as the chocolate melts.

Stir until smooth and add the vanilla (if not fully melted zap mixture in the microwave for 10 seconds).

Set mixture aside to cool to room temperature.

Cover with plastic wrap and refrigerate for 1 hour until set.


Using a teaspoon or melon baller, begin to scoop the chocolate onto a pan lined with parchment paper.

Refrigerate again for 15-30 minutes.


Shape the truffles into balls and roll in cocoa powder to coat.Wipe off excess cocoa powder with fingers.
